In a world saturated with IPA’s and dark beers that you can practically chew on; it almost seems as though old-world techniques have been lost amongst the mounds of marshmallows and cryo hops. Not saying that all US breweries are producing only fad favorites, but it is refreshing to revisit the days of old when beer was beer, and it tasted like, well, freakin’ beer.

Though there are many iconic brews coming out of Belgium, there is one in particular that has made a name for itself for producing some of the most sought-after Lambics in the world, Cantillon. If you’re not familiar with Cantillon, they are considered one of the best breweries in the world with their highly rated creations that are almost too difficult to acquire in the US. Seeing one on the shelf is like a Sasquatch sighting, even more so finding a bottle in Bakersfield.

Cantillon is committed to maintaining its traditions and producing high-quality Lambic beers that reflect its heritage. Established over 100 years ago, Cantillon still uses only traditional brewing methods, continuing to ferment their beers using wild yeasts and bacteria. They also use locally sourced ingredients whenever possible and are committed to sustainability and environmental responsibility. Cantillon Fou’ Foune Lambic

Brewed with Apricots and aged in oak barrels. The apricots are sourced from environmentally friendly and sustainable agriculture. The proportion is 300g of fruit blended with one liter of Lambic, and the soaking time is very short. Specifically, it will only take around five weeks for the lambic to extract the fragrances and flavours of the fruit. It is worthwhile to note that Fou’Foune kicks off the bottling season around the beginning of August.

Cantillon Saint Lamvinus

100 points Beer Advocate

Made with Merlot and Cabernet Franc grapes sourced from France, specifically Saint Emillion and Pomerol, then soaked in Bordeaux barrels containing two to three year old Lambic. The beer is not blended before bottling.

Cantillon Kriek

97 points Beer Advocate

Beer with a slightly acidic taste of red fruit complemented with subtle almond flavors. Kriek brings out its maximum “fruitiness” when drunk young. With age the Lambic will take the upper hand, but this is at the expense of the fruit component.
